Ingredients
Hollowed Courgette
- 1 giant courgette
- 200g brown basmati rice
- 3 large tomatoes
- 1 red onion
- Zest and juice of 1 lemon
- 2 tbsp. zaatar spice
- Salt
- Pepper
Tomato Sauce
- 2 x 500g Passata
- All the chopped courgette
- 2 red onions
- 1 litre of water
- Salt and pepper
Method
Hollowed Courgette
• Mix all the ingredients together (except the courgette)
• Cut the courgette in half and hollow out the centre part.
• Stuff the rice in the courgette and place on the tomato sauce
• Carefully place the courgette on top of the tomato sauce and cover with foil.
• Bake in the oven for approx. 90 minutes at 180°C until the rice is cooked.
• Remove from the oven, spoon the tomato into your chosen bowl and cut the courgette into discs
• Finish off with a dollop of Greek yoghurt and a few pea shoots.
