Glazed Heritage Carrots

Ingredients

  • 350g mixed heritage carrots, peeled and sliced
  • 30g butter
  • 30g brown sugar
  • 2 tbsp water
  • Pinch of salt

 

Method

  1. Combine all the ingredients in a saucepan, cover with a lid and bring to a gentle boil
  2. Once boiling, remove the lid and cook until the water has evaporated, stirring occasionally
  3. When it begins sizzling, stir more regularly and cook until glazed
  4. Serve as a side, either plain or sprinkled with chopped parsley or lemon thyme
